sunday dinner: roasted chicken.

this week's sunday dinner was: roasted chicken with a vegetable medley, sauteed baby yukon potatoes and toasted olive oil rosemary bread. YUM.

it's even more special because tot's mom came over to teach us how to make this amazingly delicious dinner. we were shocked at how simple it was and how much bang you get for you buck {we're talking left overs for days!}

Step 1:
Preheat the oven to 350 degrees. make a paste in a bowl of turmeric spices and olive oil. rub the chicken with butter, and then brush on the turmeric paste. stuff the cavity of the chicken with onion and garlic, place in roasting pan {be careful not to get this on your clothes, it stains!}

Step 2:
Bake chicken in oven {20 minutes per pound}

Step 3:
chop veggies and potatoes and lay them on a baking sheet with foil. drizzle with olive oil/sprinkle with salt and pepper. do the same with the potatoes on another baking sheet. bake at 400 degrees for 20-25 minutes.
